Mexican Corn Salad

Mexican Corn Salad is a quick, colorful salad full of fresh flavors and a kick of cilantro which makes it a perfect side salad or a dip with chips.



  • 3 tablespoons white vinegar
  • ⅓ cup virgin olive oil
  • 2 teaspoons Dijon mustard
  • 3 tablespoons honey
  • ½ teaspoon salt
  • ½ teaspoon celery seeds
  • 1 14.75 can of whole corn
  • 1 cup fresh finely chopped cilantro
  • ½ cup finely chopped sweet onion
  • ⅓ cup fresh pomegranate seeds


  1. In a medium bowl, whisk vinegar, oil, mustard, sugar, salt and celery seeds together
  2. Stir in corn, cilantro, and pomegranate seeds, tossing until coated
